Low Cal Banana Bundt Cake

i altered a banana bread recipe to make it lower calorie and lower fat. it’s absolutely delicious and tastes like you are eating something more sinful!

Try it warm with a little bit of butter

Low Cal Banana Bundt Cake

Ingredients

  • 1 1/4 cups sugar
  • 1/4 cup unsweetened applesauce
  • 1/4 cup margarine, softened
  • 2 large eggs
  • 1 1/2 cups mashed bananas (about 3-4 medium)
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped nuts (optional)

Instructions

  1. 1. heat oven to 350ºF. prepare a bundt pan with cooking spray
  2. 2. blend sugar, applesauce and margarine on medium speed until well combined
  3. 3. add in eggs one at a time until well blended
  4. 4. add bananas, buttermilk and vanilla and beat until smooth
  5. 5. mix in flour, baking soda and salt until moistened. stir in nuts
  6. 6. pour into pan
  7. 7. bake about 1 hour, or until toothpick inserted in center comes out clean
  8. 8. cool 10 minutes. remove from pan and cool completely on wire rack
  9. wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days
  10. 1 serving = 60 calories (10 calories from fat)
    1 g fat (1 g saturated fat)
