Fresh Strawberry Filling

Fresh Strawberrys to fill your cakes with. This was this found in my Land O Lakes Country cook book for a strawberry pie but I use it for filling in my cakes… Enjoy!

Ingredients

  • 2-3 C. Mashed Strawberries
  • 1 C. Sugar
  • 3 Tbs Cornstarch
  • 1/3 C. water
  • 1/2 Tsp. Almond Extract
  • 1/4 Tsp. Salt (or small pinch)

Instructions

  1. 1. Wash and cut the strawberries, holding out 1 cup of cut strawberries 2. Mash and then Measure the strawberries, placing in a bowl (I like mine a little chunky so I don’t super mash) 3.Add sugar, cornstarch & cold water in a sauce pan, mix well then add 2 cups of mashed strawberries mix & cook on medium heat stirring constantly untill mixture thickens and comes to a full boil about 8-15 min. 4. Remove from heat stir in almond extract and the pinch of salt.. 5. Let it cool Optional: (Add the remaining cup of fresh strawberries… ) fill your cake and enjoy!

Yes you will have to put remaining in the fridge but it will hold very well without being in the fridge well it is in the cake.. I think it will soak into the cake a little but not sooper wet just like most fillings do.

i made this recipe and it made 2 cups once it was cooked down, enough to fill my 10'' cake :) very yummy

This was so yummy! It's definitely going to be a favorite filling. :) It soaks into the cake just a little bit, but not too much at all, I didn't put a layer of butterceam and it's just fine. I did store it in the fridge though, but mostly because of the buttercream icing.

Yum, Yum, Yummy. Thank you for sharing. Last week I put in the filling for a WASC and also used in the bc frosting with pink food coloring for my daughters bday party. They all loved it. Tomorrow using it to fill a 4 layer chocolate cake for Fathers day. Can't wait. Once again awesome - thanks.

Oh. My. Goodness!!! This is the BEST strawberry filling I've ever tasted. I just finished making it, and I cant stop eating it :)
