Diet soda (any flavor) can replace the eggs and oil in a cake mix to lower the calories.

Diet Soda Cake

Ingredients

  • Cake mix, any flavor 12 ounces diet soda, any flavor

Instructions

  1. Preheat oven to 350 degrees. Grease and flour pan(s). Mix cake mix and diet soda according to package directions. Do not add water, oil or eggs! Bake according to package directions. The soda helps it rise.
  2. White or lemon cake works well with diet lemon-lime soda. I read that diet coke goes well with chocolate cake mix, but haven't tried it yet.
  3. A carrot cake mix can be made with 1 C diet soda, one 8 oz. can of crushed pineapple and juice, 1/2 C shredded carrots, 1/2 C raisins, and 1/2 C nuts.

i've done many of these and i find the most popular is cherry chip with creamsoda, tastes great. also cherry coke is good with chocolate cake. or root beer with butter pecan cake. this is so great for my niece who is allergic to eggs. and also for those of us on a diet too.

Haha! This sounds like a fun thing to do, but I like to bake from scratch and currently live in India where I avoid cake mixes like the plague because they are usually inhabited... What basic eggless recipe would you recommend? My daughter is allergic to egg and Indian desserts are so sweet she won't touch them with a barge pole, so I chain bake! Thanks
