Bailey's Irish Cream cake with Bailey's Butter Icing/Filling

I came up with this for some irish friends of mine. They LOVED it. I filled and iced a tier of their cake using this icing.

Ingredients

  • 2 Boxes yellow cake mix
  • 6 eggs
  • 2/3 cup oil
  • 2/3 cup water
  • 1 1/2 cup Bailey’s
  • Bailey’s Butter Icing/Filliing

  • 1 cup butter, softened
  • 1/3 cup Bailey’s
  • 2 1/2 cup Powdered sugar.

Instructions

  1. Cake: Bake at 350 until done. I used 2 8-inch pans for this, and had a little left over for a single 6 inch round for my family.
    For Icing: Mix until smooth. Fill and ice.
    I made this a few weeks ago, and i think i ended up adding a little extra Bailey’s to the icing, but now i can’t remember exactly how much….so you might want to play around a little with this.

Did you simply substitute milk with Bailey's, in which case can this be used in any recipe substituting the milk component with Bailey's (e.g. a choc cake made from scratch, as opposed to using pre-mix cake?)

Can you tell me which cake box taste really good? Because I made one the other day making a "flancocho" and the cake was awful.

today i made tres leche cake and I added Bailey's Irish cream along with the the other milk and rum and it was excellent. also I frosted my cake with home made whipping cream and added the irish cream AWESOME......MY SON ATE MOST OF THE CAKE. everyone else that tasted the cake was in love with it and they were able to taste the irish cream. so I know your cake must be good.
