Looking for input. Does this sound okay?

Cake due Monday 1 PM

Today: Dyed fondant, sealed in vacuum bags.
Tomorrow: Make crisco-based buttercream
Friday: Bake, cool. Cover cake board with fondant. Begin work on RKT/fondant accessories.
Saturday: Torte, fill, crumbcoat, seal with fondant. Affix cakes to board. Continue work on RKT accessories.
Sunday: Finish RKT pieces & cake details, assemble. Box and stow in oven for Monday AM delivery.

Would you do anything differently? Also I normally store finished cakes in a microwave that is brand new/installed but we do not use, but this will be bigger so I figure store it in an oven which is clean but we do not use... will the oven be airtight enough for the cake?

Also forgot to add..

How early is too early to bake for a cake due Mon?
How early is too early to begin modeling RKT pieces (to be covered in fondant?)
I use a vacuum sealing system for things like fondant and I suppose they could be used for the RKT in the time being. Has anyone used vaccum sealers for caking?

I think your time line to sounds good. I would try to bake the cakes more towards the evening on Friday, if you can. You might want to use a moistening syrup as well. But that's not any different than someone baking on Wednesday for a Saturday wedding.
