If you can believe it, I wasn't able to find a wedding cake shaped cookie cutter anywhere in San Antonio! I made a template and hand cut all of the cookies. They are very large (6 inches tall). I used Duff's technique for the little flowers.
Sure, Duff cut out 3 circles and laid them partially on each other in a straight line (like a fan of cards but in a straight line). He had a brush with piping gel on it and ran a line down the length of the 3 circles in the middle. He then just rolled up the disks and fanned out the edges a little and cut the extra off. I found if you are careful you can save both ends and have two flowers. I want to try it with more than 3 circles. I hope I made this plain. You can see how the top layer of the cookie.
