Strawberry Shortcake Wedding

Strawberry Shortcake Wedding on Cake Central

This was THE MOST FUN cake I've done! Bride wanted strawberry shortcake and it didn't matter that the groom hated strawberries! hahaha! Two layer cakes were torted for a total of 4 layers per tier. Top tier iced in basketweave to resemble a basket of strawberries on top. Lessons Learned: Cut strawberries in half to attached to cake, otherwise they keep rolling off. Next Time: Add some kind of pretty decor where the torting shows to make it wedding-pretty.

what kind of cake did you use for this? Did you make an actual shortcake, or is it a sponge cake or something similar? Looks delicious btw.

I used regular 'ole Betty Crocker white cake mix. I was concerned about it getting dry, but I kept it wrapped in Saran Wrap until the wedding day morning, then added the icing between each layer, and it worked out fine!

I'm loving this cake, and thinking of someone I know who doesn't care for "cake". What would you do differently for decoration next time?

I would add a bottom border to each tier to cover the cardboard. I would either create a larger bed of icing for the strawberries to adhere to at the base of the bottom tier, or I would cut the berries in half and glue them to the sides using a blop of icing as the glue. I would pipe a row of dots or a small shell design on the sides of the cake where the filling is exposed, just to make it wedding pretty.
