The ruffles are done with a gadget called La Girolle ruffler, rounds of chocolate fit on the devise, turn the blade handle and it makes ruffles.

Shirley, when you use the Girolle ruffler, do you need to purchase the chocolate disks, or can you use and other size chocolate?

You need to order chocolate rounds made for the La Girolle. You can special order them by phone from Marque Foods in S. San Francisco.

So pretty! I love the two tones, really adds some uumph and stands out. Also the pattern on the wrap is very eye catching and interesting, too!

Thank you, the cake is iced in Sarah Bernhardt chocolate glaze, allowed to set until a bit firmer and the design is done with a serrated edged bread knife.
