I did this for my nephews birthday. Caboose is filled with m & m's, and the middle car is loaded down with chocolate covered pretzel sticks. And yes, that is a real working light in the front of the engine.

I found the lites in the craft section at walmart, they are little party lites you twist to turn on. Suppose to last for up to 8 hours. I made the cake boards out of wood and attached wood wheels. Painted all black with silver trim and wa-la!
