I am sure there must be other techniques but this is how I do them. I just dip the strawberries in white candy melts or almond bark. Try and go up very close to the leaves and stem. Otherwise you give room for oozing strawberry juice. Let those set up and then dip with chocolate melts or almond bark on the side at angle and then the other side to form the jacket front. I then pipe a little bow tie and buttons. That is it.
