Italian Cream W/cream Cheese Frosting And Sugar Roasted Pecans on Cake Central

This is a doctored cake mix version of an Italian Cream Cake that I used the crusting cream cheese icing recipe I got from CC ... I surrounded the bottom edges and the cake with sugar roasted pecans... the groom's mother was very, very pleased with it and told me how much she liked it .. always makes you feel good to hear positive feedback :)

What recipe did you use for your sugar roasted pecans and how many pounds of pecans did this cake take. I have seen this somewhere and thought how delicious it looked. Great Job!

I made about 6 pounds of pecans up and used about 4 to 4 1/2 pounds.. the mother to the groom bought the rest of what I had left to use on the groom's table .. I post the recipe along with the italian cream cake recipe I used for the cake in the recipe section .. the sugar roasted pecan recipe is right below the cake recipe :)

I have to tell you that I made your sugar pecans.....they almost didn't make it to the cake between my husband and I. DELICIOUS!! The cake looks so yummy. I put them with the cream cheese icing on a pumpkin cake with French chestnut cream filling....it worked out well. I want to try your cream cake next!
