I made this cake for a friend of mine. I had SO MANY issues with this cake, but the roses were fun! The girl was 8 years old and designed the cake herself. The cake is white cake with mint chocolate chips, the filling is chocolate with crushed up mint candies and the buttercream frosting has a peppermint flavor. I wish I could eat this one. I just can't get a smooth buttercream to save my life! AGH!

Thanks so much for the idea. I have struggled for a while to make it smooth. That tip is GREAT. I will try it for my thanksgiving cake.

the cake is beautiful! The trick to smooth buttercream is once you have the frosting on the cake fairly smooth with your knife and it dries for about 10 minutes, take a Viva paper towel (smooth side down on the cake) and rub with your hand. Keep doing this until you get it fairly smooth. Then wait another 10 or 15 minutes and put your paper towel down again and take your gumpaste roller or your fondant smoother and just rub until you get it smoother. It's amazing what this paper towel can do!!!
