A chocolate wrapped cake with chocolate ruffles.

I tempered the chocolate, put nylon cel boards in the freezer, spread chocolate in a rectangle on the frozen board. It sets up almost instantly you have to work quickly. Using a bench scraper or wallpaper scraper, scoop up the rectangle from the bottom to the top. Pick it up in both hands, accordian pleat it from the narrow side, fold it into a U shape and bring both ends up to the top, so they are side by side. Pinch the chocolate at the bottom and fan out the top edges into a fan shape.

Shirley your work is sooooo incredble! Can you tell me is it pretty easy to do the ruffles or is there and easier way to do it?

Steph, this is the only way I know to make the large ruffles and have them all uniform in size. You can make smaller, thnner ruffles with the La Girolle ruffler.
