Time constraints don't permit me to write instructions for my cakes. Maybe someday I'll find time to write them all down in a book. My advice is to try to carve something....use a model (I used the actual tennis shoe for this), graph it larger or smaller, bake your sheet cakes and start carving. I didn't take any classes, just used Roland Winbeckler's book and taught myself. It's a good place to start....and remember - it's just CAKE!

Sheet cakes are 1 layer cakes baked in a rectangle pan...8x12 inches for example.

Which one of Roland Winbeckler's books would you recommend?

His book on cake sculpting. You will find most of the Debbie Brown books very helpful, too.

The customer reviews on Amazon.com for the cake sculpting book is pretty bad. Did you personally find the book useful? Is your viking head cake inspired from the book?Since I love your cakes, based on your response I may go out and buy the book.

Yes, the Viking is based on his book. I have found that a lot of cake decorators want very explicit directions...size and shape of cakes, how high, etc. Roland's book teaches the method and concept and doesn't provide explicit directions for each of his cakes. That doesn't make it a 'bad' book. If you understand the method and concept, you can reproduce any item as a 3-D cake AND get the number of servings ordered. He teaches to graph an item from the side and from the top so you can place the suppo...
