I made this for my Uncle's birthday. He has always loved the desert and so I thought he would like this cake.

The needles took forever to put on! Made out of royal icing. The book said to make 300 but I went through over 1000 between all of them in the cake the ones that broke.

Cake is French Vanilla with Apricot filling and buttercream icing.

Awsome cake. I wonder if the needles would be less likely to break if you used color flow mix instead of meringue powder in the royal icing?

Karateka my only advice is to make tons of the needles. They break very easy and extra flowers. The one I thought looked the best broke so I had to go with this one. I used Oreo cookies broken up for the dirt but under that I have the pot filled with beans so I didn't have to use to many cookies. Beans are cheep :-)

Great cake Joanne. You could have used dry Vermicelli pasta for the cactus spines but that would have been just as much work removing all of them from each serving.

Holy cow!!! I can't imagine how you ever did this! The beans are a great idea, too...did you use a special pan or carve the cactus from standard shapes?

I did think of using the pasta but I was told by someone who did that it didn't look as well and yes it caused a lot of time to remove. I used the Wilton ball pan. It was super easy to do this cake. Just takes a lot of time.
