In album: wedding-square
This 7", 10", 13", 16" square wedding cake was entirely done in red velvet cake with creme cheese frosting. The bride's colors were off white, white, and deep red. In order to enhance the effect, I used a white dotted swiss accents and borders on the off white creme cheese icing. The roses were place between the layers to hide the pillars. I do not usually work in creme cheese for wedding cakes, but after experimenting with my recipes I finally found the right combination for stability.

The cream cheese icing is 2c. buter Crisco, 2-8oz. cream cheese, 1/4c. milk, 1/2c. flour, 1t. vanilla, 1t.butter flavor, 4lbs.powdered sugar. Mix on high in a heavy duty stand mixer for 10 mins. Adjust thickness due to humidity and climate with flour.

mdurbin1961 7/19/05 at 11:00am
The roses are silk. I was very impressed with the quality of them. They looked real!!

Are these push in pillars and if so, what size? Really pretty wedding cake!
mdurbin1961 7/21/05 at 11:53am
Yes, they are the 7" hidden pillars. I think they are by Wilton. They are hollow white plastic pillars that go all the way through each individual cake to its bottom board. They fit securely over the posts on the bottom of most cake plates. You don't have the slipage problem that you do with dowels, but you probably loose a serving per pillar due to there size.
