Coconut-Pineapple Cake W/whi Choc Pineapple Cream Cheese Icing
Baked this cake for the overworked guys in our Homicide Investigation Bureau. Got a special request for a pineapple/coconut cake and couldn't resist the challenge. This is a scratch cake and it baked up beautifully. I added about 1/4 cup coconut cream coffeemate liquid creamer to the batter. Homemade pineapple filling and white chocolate pineapple cream cheese icing!! YUM!! I hope they like it.
