I have purchased a couple of press on letter/number stencils in various fonts that work well. You can gently press those onto the icing (after it has slightly dried) and have a small indention to use as a guide for piping the letters. Works great!

For those who asked, you can lay a piece of waxed paper over the BACK side of the template trace with piping gel. Flip waxed paper over and gently press the piping gel letters onto the cake. These will be your nearly invisible guidelines for piping your icing over.
