I finally tried the gelatin flowers that I saw posted in a forum here.  They were so easy and they are a fresh change from typical flowers.  Unfortunately, they're not edible (they're formed on floral wire) but I'm getting over my "everything on the cake must be edible" issues.

This is so pretty! I was getting up the courage to try the gelatin flowers next week--yours turned out amazing!

KatieTaylor77 -- try the gelatin flowers. I could not believe how easy they were. The most time consuming part is forming each individual petal with the floral wire. After that it takes very little time to complete! I did read in the directions that you should NOT double dip your petals but I did it on a few of them (the really dark purple ones) to see what would happen and i like the contrast. You do have to kind of scrape the excess gelatin off so it doesn't drip but it worked well.
