Just did this today. The simple 3 tier cake was surrounded by fresh wheatgrass on the display table. Reminded me of Easter a bit! I wish I had put the cake on a higher stand though, as the bottom tier was nearly swallowed up by the long grass!

It's Martha's Italian Meringue Buttercream. It really helps if it's at room temperature...not too cold. It smooths like a dream! That...and practice! I forgot to mention the cake's flavour. It is a triple-layer Toasted Walnut & Pineapple Carrot Cake with Orange Sour-cream Cream Cheese Frosting. SOO YUMMY!!!

Beautiful smoothing job and nice sharp looking cake, can't say as I care for the grass hiding the cake though (Just my opinion) The cake sounds' delicious to say the least!

No, I absolutely agree. I was told the grass would be a few inches tall, so only to make a styrofoam stand that was maximum 2" tall! Well, the grass was about 6"...completely hiding the first tier. Quite disappointing!!

I don't really know how to explain that, but using a ruler is an easier way to ice them straight.

It was 6", 9" and 12" squares...that combo feeds 126 (4.5" tall x 2" long x 1" thick slices)
