3-Tier Square Sotas And Pearls
This monster served 240 guests and the MOB told me only 5 pieces remained. Each layer was a different flavor....bottom white with banana creme, middle white with chocolate mousse, and the top pineapple italian cream cake......all iced in buttercream.

Yes, this is 2016, 9 years later, but what a fabulous way to cover a square, crumbcoated cake when it is impossible to get crisp corners. I recently made a 10/8/6 square and the buttercream was hideous and full of holes (like using whipped yogurt...). This would have been a perfect way to "save" that awful cake. I ended up using scrolls, but this would have been MUCH better. Will keep in my "in case" file! Thanks!
