Antonia74, How do you store your iced cookies? I made some cookies the other day and just have them on the counter in a sealed plastic container... will they get too soft? Can I freeze them after icing?

No, don't freeze after icing!! The icing wants to be as dry as possible...but moisture forms after you remove that icing from the fridge or freezer. I make them up to a week in advance for the client and store them in pizza boxes, out of the sun & humidity...or I package them individually in cellophane. The gingerbread cookies last for weeks because there is not as much butter in the recipe as a Sugar Cookie has. I only make my icing with meringue powder too, not fresh egg whites.

can you share your recipe for the icing,,,,,, i have tried to make iced cookies before, to mail to my sister, but they dont harden up enough to make the trip
