I use a pie scraper (I think that's what it's called). It's metal and has a rolled handle and a flat edge. I just put the cake on a turntable and run the pie scraper around it. It works every time! :)
Thanks!!! The monogram is royal icing, and then I used super pearl luster dust mixed with lemon extract and painted the letters (after the royal icing had dried for a couple days). HTH!
