Pina Colada Rum Cake
In my quest to experiment with different cake flavors, this one was made with yellow cake mix, cream of coconut, crushed pineapple and of course, rum! Icing is coconut flavored whipped cream with toasted coconut sprinkled on. Too bad Icould not find one of those little paper umbrellas for decoration!
This recipe is inthe Cake Mix Doctor book - truthfully just "threw" coconut on cake and it stuck!
Can you tell I accidently put my hand in the icing? LOL!!!!
No, can't tell you accidentally put your hand in the icing. It looks very pretty with the toasted coconut all over it!
