Ok, so a Croquembouche is originally made for weddings but I decided to surprise our friend with a big mountain of choux filled with bavarian cream or chocolate cream. This took about 100 choux and several hours of work. Over the top is a little flag form India with a leyend of his bday. Was fun making this cake for the first time.

Croquembouche is a french wedding cake, its name means croquem = craking and bouche = mouth that cracks in your mouth since they crack due to the sugar that holds them together. For the cone, I used cardboard covered with parchment paper.
