First Diabetic Cake
This is a 6" round diabetic cake made with Splenda. The cake and the icing are sugar free. After putting on the floral and greens, we topped it with fresh raspberries. The filling is a sugar free diabetic mousse recipe we found on Allrecipes.com, It was for a lady's 80th b-day in which they put a #1 for the person she was.

Thank You! Using Splenda sugar was difficult in the icing, made it really soft and I had to work fast to get it to uphold even with the merigue in it. I don't recommend this idea unless you can find an ULTIMATE Splenda recipe for the icing!

We used Splenda as the substitute. There are many cool Splenda recipies you can find online. WE took the basic recipe and watch the consistency as we made the icing. The cake and the mousse filling were all sugar free recipes we found online. Like I said we started out with the basic recipes and then went from there only tweeking things when needed. BD.com has a lot of sugar free recipes and advice. BTW thanks for you comments!
what did you use in the icing?I found a recipie on here that calls for powdered milk rather than powdered sugar and was wondering what the texture of it was like.Beautiful cake btw!
