My sister turned 42 over the weekend and I brought a cake for her to our family easter party. She never likes things to be too showy, so just a simple cake. (but soooo yummy) Coconut pineapple cake with white chocolate cream cheese icing. I used the icing to write happy birthday, and writing on the pinapple filling turned out to be a little harder than I thought it would be...LOL Thanks to cindy6250 for sharing this recipe!!
