Groundhog's Day Cupcakes
Got the idea off the web. Chocolate cupcakes with white icing. A small divot is dug out of each cupcake and the crumbs set aside. Groundhog is made of an Almond Joy body, mini M&M ears and cheeks, frosting teeth, the corner off a gummy watermelon candy for a nose, and a halved jelly bean for eyes. Cake crumbs from the divot are sprinkled around him so he looks like he just popped out of the ground.
