The bottom and top cakes are fruit cakes, the middle is sponge. Never use a sponge as a middle cake. I caught my royal.....I was having problems with the sponge cake holding up the weight of the small 6" fruit cake. Was definitely a learining experience. The cake is covered in fondant and the flowers are made out of gumpaste. The only thing not made out of sugar is the ornament separating the cakes.
