This is a flourless chocolate cake. I made it in a jelly roll pan and cut it to make this 6" x 9" size, per the customer's request. It needs to fit in a camper freezer until the Anniversary day. It is filled with chocolate chip whipped cream and iced with stabilized whipped cream.

Any tips on making the stabilized WC? I am not having any luck with it holding up. Yours looks so light and fluffy!
I follow the directions in the cake bible and use some gelatin. Are you using gelatin? PM me about it if you want.
