Shoe (a PF Flyer) is carved chocolate cake covered with chocolate ganache and whipped chocolate ganache for the filling. All edible except for the "diploma." The graduation cap is made of half of a 3-inch cake ball for the dome and a gumpaste top with fondant tassel. Followed Mike McCarey's Craftsy tutorial for the how-to.
