This cake is up for review for the PRCC: This was for my mom's 52nd luau themed birthday. The cake is White Velvet with mixed berry filling and Vanilla Bean IMBC. The cake is covered with Fondarific fondant. The trees, coconuts, tiki man and pineapple are my first attempts working with modeling chocolate. This is my first attempt using ruffles on a cake as well. I used them to represent lei necklaces. The flowers are gelatin (mom loves the crystal look and requested them). I used Wilton's fondant for the covered board. I took leaf cutters, cut out leaves and halved them for the layered grass look I wanted. I used confectioner's glaze, half strength, to achieve the waxy look of the leaves of the trees and pineapple.
