I made this ruffle cake with a gumpaste peony for my friend's daughter's first birthday. The little one is allergic to dairy, so I had to make a shortening based buttercream. I think the ruffles would have looked smoother if I could have used IMBC. Or maybe I'm just fooling myself, because I'm really not used to doing actual decorating with buttercream. ;-)
