This cake was made for a reception of the Concert Band Director from Funari High School in Nagasaki, Japan when he and his students visited Seminole High School in Sanford, Florida. The event was held at Monarch Farms near Sanford; the farm is named after a butterfly but filled with horses. The tiers were all citrus flavored & made from fresh fruit; the bottom was Valencia Orange with orange mousse filling. The middle was Meyer Lemon with raspberry mousse filling.The top was Brown Derby's recipe for Pink Grapefruit cake with Grapefruit Mousse filling. The cake is iced with Cream Cheese Butter Cream Icing.
