The flowers on top of the cake are a nice touch... Oh and it's not really cheating. I've done wedding cakes before where the bride has insisted on silk flowers and grooms cakes like one in my pictures where the groom wanted "real stuff" on it... I think it looks great and I love that you used ganache instead of butter cream.. I'm curious if it was more difficult than using buttercream....
Thanks! I really like to use ganache! You just need to make sure that all of the chocolate is melted when you are making it, so pieces do not get stuck in the tip. Otherwise, it works really well and I usually don't have to warm it up at all. I havent used dark chocolate for rosettes, but I think that may start to set up faster than the white chocolate. (Also your grooms cakes look great - I really like the 'slice' of wood the one cake it sitting on!)
