In community album: Birthday Cakes
This cake is extremely special because of who it is for. Having lost all my other grandparents and having my husband's last grandparent in hospice care, it is the most special cake i've ever done. Very simple, because she wanted it that way. She was quite vocal, I want something that's easy to eat, "it get's harder to chew when you get older...My hands are hard to work so I don't want to have to peel stuff of my cake...don't make it to big because I want to be able to cut a piece by myself." It met her specifications and she really loved it. It is a 8" lemon yorgurt cake. Side stencil and fantasy flowers. She liked it so much when it was half way gone, she stopped people from eating it because she wanted to eat the rest herself.

    OMG!!! You are truly Blessed to have been able to have this coversation, and have the cake eaten also. May Angels watch over you and your family. We just lost our Pa in Oct...and it was very hard. Our world seem to have stopped for us when it all went down.
    As to the Cake, Awesome work!!! I wish I could get my cakes that flat!!! I tend to fight with mine to get where Im at. Please share how you do this? I never can seem to. Im a self taught person and work in bc only. Thank you!!! Please inbox me if you care to share.

    My buttercream cakes have improved immensely since using instruction provided in Sharon Zambito's DVD "Perfecting the Art of Buttercream". Other than that, I say it takes lots of practice. Every cake gets smoother and smoother as time progresses. I do use a number 21 tip to pipe the icing on the cake in concentric circles on the top and lines straight up and down on the bottom so the icing is on evenly before smoothing. For the tops I use an offset spatula placed in the middle and I turn my turntable until it is smooth. I don't move the spatula just the cake. Then polish off with the viva paper towel method as shown in the DVD. I ice and smooth the top first. Then I move to the sides.
