We call it sugarpaste in the UK, but yes I think it is called fandant icing, it's the one you roll out and cover your cakes with anyway!!! I rolled this out a little thicker than usual so that I could mold the nostrils and indents for the eyes of the horse. I used an oval pyrex glass dish to bake the cake in, then once cooled I put it in the freezer for about half hour so that it would be easier to carve the shape of the horses head.

Love this cake...it looks fantastic. I really love the eyes. They give the horse character.
