Christmas 2004 on Cake Central

Trawling the archives to find some earlier cakes of mine! This was a fabulous Jane Asher recipe rich fruit cake (very boozy!), covered in marzipan, then Royal Icing, sprinkled with Disco Glitter and finished with a hand-painted fondant plaque angel.

The spiky icing is a very traditional look for a British Christmas Cake - it's just Royal Icing (a thick coating), which has been 'pulled' with the blade of a knife or small pallette knife. Put the blade flat against the icing and draw it away . The Royal Icing should be made thick enough to hold it's shape. Add a few tsp of glycerine to the icing when you mix it though, or you'll need a hammer and chisel to cut it once it's dried out lol!
