This was a hard cake to carve....fruitcake! Took me forever to get it smooth. Covered in marzipan first and then fondant. Board is hand painted fondant.
Thanks. I made sure the ingredients were chopped pretty small. Also make sure the cake is nice and moist. I fed mine brandy for a few weeks and it turned out great. I then put it in the freezer for 20mins or so before I carved it. The layer of marzipan under the fondant helped a lot with the fondant turning out smooth. Hope that helps you out. Have fun with it.
