So cute...and they sound yummy! Did you put the apple pie filling in the cupcakes before baking? Also...would you be willing to share your caramel buttercream recipe?
getus - I used an apple corer after baking and put the apple filling in post-bake :) I didn't want the juices to make the inside of the cupcake mushy while baking!
also, the buttercream recipe I used was this:
1 cup unsalted butter
2 cups + 4 tablespoons of brown sugar
1/2 cup milk
1/4 teaspoon baking soda
1 tablespoon light corn syrup
1/4 teaspoon apple pie spice
4-5 cups powdered sugar (I used about 5 cups to get a thicker consistency for piping the frosting.)
