Pistachio Cupcakes with Pistachio-Mastic Frosting
Pistachio-Mastic is a traditional Middle-Eastern flavor for ice cream & sweets. I decided to try it on a pistachio cupcake for a new cupcake flavor.
It's a syrian flavor to be exact, & very hard to describe but I'll try. It is creamy, sweet, aromatic, a hint or cardamom smell, maybe a bit of a bitter taste in the end that doesn't ruin the taste but complete it.
Try finding an ethnic shop near where you live & you may be able to taste it for yourself as there are ice creams & gum with this flavor. Or just visit us :)
It's mainly heavy cream (double cream) infused with mastic & pistachios & other spices (over very low heat for maybe 30 minutes to get all the flavors) then whipped after straining. I then pipped it & topped it with some ground pistachios
