Bottom tier is four alternating layers of mandarin orange and spiced carrot cakes, filled with layers of pineapple-vanilla cream and cheesecake; middle tier is four alternating layers of fudge and sour cream vanilla cakes filled with chocolate mousse; top tier is mandarin orange cake filled with pineapple-vanilla cream. Iced and piped with whipped cream. Adorned with fresh flowers from their garden. Cake components were shipped UPS overnight from Washington state to Indiana at - yikes!- almost $500! The ceremony was held up for the cake to be finished (techinical difficulties making icing in hotel room), so I had to adjust design :(
