Ever since I saw a hat cake done by smiley1908 I have wanted to do one for my husband. He has So many hats and is a huge Longhorn fan. So using one of my husband's hats and the picture submitted by smiley1908 as inspiration, I attempted my first hat cake. My husbands request was for something different and spicy. So this is a Mexican chocolate cake with a thin layer of raspberry preserves and a habanero mousse filling! He loved it! :)
