Kransekake - The Traditional Norwegian Wedding Cake

Kransekake - The Traditional Norwegian Wedding Cake on Cake Central

I almost forgot about this one. I made this for my Brother's wedding, kind of like a groom's cake. It is stacked concentrical rings, 18 total, made from an almond paste dough. Each ring is securred with a simple sugar frosting, thin to get the "squiggles" to drape frem betweent he layers.

My heritage is Norwegian and my Grandmother passed her set of cake rings to me. The almond paste dough is pressed/placed in a ring for baking. There are 6 pans in the set each with 3 sizes. After baking you start stacking, the largest ring from each of the six pans, then the center ring and finally the inner rings. I wish I had had the pans when I got married! Love to incorporate our heritage in as much as possible.

How wonderful to see. I am a norwegian my self, and just love to eat this cake. It is great to hear that you also want to keep your heritage. ;-D
