My bride had a very Country chic wedding at her family ranch yesterday. She had the most amazing, unique touches and I adored creating this cake for her. I layered fondant ruffles on each tier. The tiers were 6-9-12-15. I timed myself so I could give other decorators an idea. Not including the icing, the top tier took around an hour, 2nd tier took about 75 minutes, 3rd tier was about an hour and 45 minutes, and bottom tier was right around two hours. The bride wanted gumpaste roses, so I made three different sizes. Then I added wafer paper butterflies with edible glitter. Her colors were pink and turquoise and so I did the butterflies in the turquoise. My husband shot the wedding, and he also did her bridals. If you are on my fan page on fb, I posted one of her amazing bridals today with her horse. She is a champion rider and wanted him in some of the photos. Unfortunately, I am not able to share the picture here. She was such a sweet bride, and she told me that the cake was her favorite part of the wedding.

Stunning as always! :) I'd love any tips in regards to your method on those ruffles as I'll be attempting a similar design in a few weeks! *eek!*

its stunning :))

I added a few pics I took with my cell phone. This cake was done with buttercream that I attached the ruffles to. I started out with about an 18 inch long strip of fondant which was about an inch wide. I do vary the width so the ruffles will look a little different. I roll it semi-thin. If it's too thin, it will tear, etc.. If it's too thick, the ruffles look bad. So I just take the piece of fondant and lay a portion of it over my foam. Then taking my baller tool I just gently pull the edge of th...

tool I just gently pull the edge of the fondant up, and it starts the ruffle. Then I adhered it with a strip of buttercream. You have to be careful as it will start flopping over, so you might have to go back and adhere it in places with buttercream.

Beautiful cake, and great for a country-western theme, where the ladies all dress in lots of ruffles anyway!

Beautiful can i ask you how you made the butterflies?
DonnaOK 6/11/12 at 5:07pm
Forgot to mention how to do the butterflies. I made them using wafer paper butterflies. They are printed with edible ink on wafer paper. After cutting them out, I use royal icing and pipe a line of it onto wax paper. I then coat the butterfly with clear piping gel, and then sprinkle it with disco dust. I then push the butterfly into the line of royal icing. On some I used that method, on others I cut wings out and stuck them into the royal icing line. They are super easy to make, and really pretty!
