This cake was made for three very hip graduates of East High School in Denver. They love coffee and Emerson...(my kind of kids!) The cake is four layers of dark mocha, with Nutella filling. It is covered with a expresso butter cream and an almond infused fondant. The Emerson quote and the diplomas are sugar paste.
