Bounty (milk chocolate/coconut white chocolate) mud, Oreo Cookies 'n' Cream mud and white chocolate mud cakes, all torted and filled with whipped ganache and covered in ganache and fondant. Black royal icing damask pattern on bottom and top tier, quilt embossing and silver cachoux to middle tier. White gumpaste roses and leaves and black ribbon detail with silver monogram. 5"/8"/11" in size. Thanks for looking!

Hi Icingbee...I used black royal icing, and a stencil. I also overpipe with my stencilling to add depth.

Beautiful! Do you paint the royal icing on with a brush or use a tip? If so, what tip do you use to get the damask to look so perfect. I have tried to use stencils but I create a runny mess!

Hi Wendy...you need to get the RI the perfect consistency. Black is awful to work with if you make a mistake. I use a brush to kind of feather from the outside in (a bit like brush embroidery) but I always start with a good stencil imprint first! You need the RI soft but not liquid. To thick and it goes blobby and too high/uneven. HTH :-)

Beautiful cake!! thanks for sharing info. May I ask what type of brush you used for the stenciling?What do you mean when you say "you start with a good stencil imprint first" I thank you in advance for your time and generosity in sharing.

Hi Soledad, I'm sorry I confused you :-) I stencil as you normally would, then load up a normal size 0 paintbrush with the same colour RI and brush it over the stenciled parts from the outside of the RI stenciled parts, inwards, like you would when you do brush embroidery. Hope that's clearer!
