Thanks! I use a non-crusting buttercream (Martha's Italian Meringue), so the smoothing is done with the pastry scraper. I LOVE to do the final smoothing with a plastering tool from the hardware store. Really sharp and smooth! Each cake is 4 layers of cake & 3 thin filling layers.
