how did you make the chocolate panels? Beautiful cake!

For the chocolate panels I used the candy melts and spread the chocolate onto sheet pans lined with wax paper. I put them in the fridge until the chocolate set up but was still soft enough to cut without shattering. Then I cut them with a sharp knife and put them back in the fridge to chill.
