This was a cake I made for a school fund raiser auction. It's my second attempt at a Topsy Turvy cake and I have no idea what i'm doing wrong. They seem to explode on me regardless of how many dowles I put in for support. Any suggestions are gladly welcomed! lol

Wow, I'm sorry! Gosh and it looksl ike you put in so much work! Have you checked out the tutorial on the topsy turvy cake here on Cake cantral? Also maybe you are making a cake thhat is too soft? Maybe you need to change your recipe and use a 'harder' cake? I dunno...but am sure you'll get the hang of it sooner or later! Good luck!

Thanks Sifushka! I did come to the conclusion that my cakes are too moist to use for a Topsy Turvy. lol I will try your sugestion and use a harder cake. Thank you!

are you putting a plate under each layer along with the dowles?
heidijack 10/5/11 at 6:40am
Yes, I did put discs under each layer and used lots of dowels to support the weight.

You may need to use a recipe like WASC. This recipe will give you a firm cake. It?s the only cake recipe I use when doing cake sculpting.

gmlugo, What is WASC so I can use it next time?

oh bless u, all your hard work! i havent made a topsy turvy but I have made tiered cakes and I tend to use a buttermilk poundcake recipe from allrecipes.com, or a variation of it, its really firm but really moist at the same time because of the buttermilk i suppose! good luck :)

You may also want to order Sharon Zambito's topsy turvy DVD..it will make all the difference in the world. She also has recipes printed on the coverlet.

I have never made a topsy turvy cake because this is my biggest fear. But now I will make an attempt....but first I will invest in the DVD
